  1. Chicken Soup: I just buy cut up chicken and take the skin off, put it in a big pot, add a whole vadilla onion, big one, chopped up. a few carrots, celery stalk, thyme about a teaspoon, salt, pepper and parsley and two whole bay leaves. Fill pot with water about an inch from the top. bring to a full boil and then reduce to a simmer for at least 1 and 1/2 hours but not more than 2. you can add more water if it goes down. Strain the broth into a bowl and save some of the chicken meat and toss the veggies and the bones, etc. then boil water and cook the noodles. drain the noodles and add to the chicken broth. You can bring the whole thing to a boil or just warm it again.
