Ingredients
- 2 Medium Eggplants, cut into 2 inch pieces
- 6 Medium Zucchini, halved lengthwise and sliced
- 3 Red Bell Peppers, chopped
- 4 Medium Tomatoes, chopped
- 4 Yellow Onions, chopped
- 4 cloves Garlic, minced
- 1/4 cup Olive Oil
- 1/2 cup Vegetable Broth
- 1/2 tsp Dried Thyme
- 1/2 tsp Dried Oregano
- 2 tsp Salt
- 2 tsp Pepper
Preparation steps
- Add all ingredients to the slow cooker and mix together.
- Cover and cook on high heat for 4 hours or low heat for 8 hours.
